Tomato Soup Recipe

Tomato soup is a soup made with tomatoes as the primary ingredient. It may be served hot or cold in a bowl, and may be made in a variety of ways. It may be smooth in texture, and there are also recipes which include chunks (or small pieces) of tomato, cream and chicken/vegetable stock.   • 1 onion
  • 1 garlic glove, peeled and smashed
  • 2 tablespoons oil
  • 1 can (14,5 oz, 4 dl) chopped or diced tomatoes
  • 2 cups (5 dl) vegetable broth
  • 1 teaspoon oregano
  1. Peel and chop onion and garlic.
  2. Heat the oil in a saucepan and add onion and garlic.
  3. Cook over moderately low heat, stirring frequently, until softened.
  4. Add tomatoes and vegetable broth. Let boil for 5 minutes.
  5. Add oregano and other seasoning to taste
  6. Let cool briefly and then purée in in a blender or food processor.
