French Onion Soup Recipe

Ingredients
  • 6 Onions
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • ½ teaspoon sugar
  • Ground black pepper, to taste
  • 1 teaspoon salt
  • ½ teaspoons thyme
  • 4 cups (1 litre) vegetable or beef broth
  • 4 pieces of toast
  • 1 cup grated Emmental cheese
Instructions
  1. Peel the onions and cut to thin slices
  2. Melt the butter with the oil in a large pan on medium heat
  3. Add the onions and sauté for 5 minutes or until tender
  4. Add sugar, salt and pepper
  5. Cook 20 minutes, stirring frequently
  6. Add the broth and thyme, bring to a boil
  7. Cover and simmer for 30 minutes on low heat
  8. Pour the soup in to oven safe bowls
  9. Toast the bread
  10. Put the toast slices on top of the soup and cover with grated cheese
  11. Bake in 475 F (250 C) for 10 minutes or until the cheese is browned and bubbling
