Green Bean Potato Soup
 
Ingredients
  • 3 cups green beans, trimmed and cut into 1 inch pieces
  • 3 potatoes, peeled and cubed
  • 1 quart milk
  • 1 quart vegetable stock
  • 2 tablespoon butter
  • 1 clove garlic, minced
  • Salt and pepper to taste
Instructions
  1. In a heavy pot, melt butter over medium low heat
  2. Add minced garlic, being careful not to burn
  3. Add potatoes and green beans.
  4. Sauté in butter for 3 to 5 minutes
  5. Add vegetable stock and milk, salt and pepper
  6. Heat until milk is steaming
  7. Serve
